- Mix rice flour, urad dal flour, melted butter, oil, asafoetida, cumin seeds, and salt in a bowl.
- Add water little by little to form a non-sticky dough with no cracks.
- Heat enough oil in a kadai for deep frying.
- Fill a murukku press with the dough using the plate with holes suitable for murukku.
- Grease a ladle, form the murukku shape on it, and gently invert it into the hot oil.
- Deep fry on medium flame until the sizzling sound stops and the murukku turns golden.
- Drain on a paper towel and let it cool completely before storing in airtight containers.
Notes
- Keep the dough covered to prevent drying.
- Make in batches to maintain the texture.
- Ensure the rice and urad dal flours are finely ground to avoid breakage.
- Adding more urad dal flour can alter the color and texture.
- Fry in enough oil to prevent uneven browning.
- Top up with more oil after a few batches, as it gets absorbed.
