- In a pan, dry roast the grated dry coconut over low flame until aromatic.
- Add cardamom powder, mix well, and set aside.
- In another pan, melt the crushed jaggery with ¼ cup water.
- Once melted, filter the syrup into a fresh pan and boil over low to medium flame.
- Stir continuously until the syrup thickens to a hard candy consistency.
- To test, drop a little syrup into a bowl of water. If it forms a hard ball, the consistency is right.
- Lower the flame and add the roasted coconut to the syrup.
- Mix well to form a slightly thick, loose dough.
- Grease a flat tray or plate with oil/ghee and transfer the dough.
- Flatten to about 1-inch thickness or as preferred.
- While still hot, cut into pieces using a greased knife.
- Let the pieces set for a few minutes until they harden.
- Store in an airtight container to keep them fresh for up to a month.
