Instructions
- Use a heavy-bottomed vessel to avoid burning. Wet the base before pouring the milk to prevent sticking.
- Add milk to the pan and give a quick stir to prevent sticking. Boil and stir occasionally to avoid burning.
- Place a ladle on the pan to prevent overflowing.
- Keep the flame at low-medium and continue boiling until the milk reduces to about ¼ of the original volume. This may take an hour.
- Add sugar and cardamom powder.
- Cook for another 5-7 minutes until thick and still slightly gooey.
- Add 1 tbsp ghee and stir. Add the remaining 1 tsp ghee and mix until the mixture leaves the sides of the pan.
- Switch off and let cool, as it will thicken further upon cooling. Enjoy the Palkova warm or at room temperature.
Notes
- Use a heavy-bottomed or nonstick pan to prevent burning.
- Stir often and scrape the sides to include milk solids.
- Adjust sugar quantity according to your sweetness preference.
- Use a wide pan for quicker reduction.
- Store in an airtight container in the refrigerator for up to a week.
