Instructions

  • Use a heavy-bottomed vessel to avoid burning. Wet the base before pouring the milk to prevent sticking.
  • Add milk to the pan and give a quick stir to prevent sticking. Boil and stir occasionally to avoid burning.
  • Place a ladle on the pan to prevent overflowing.
  • Keep the flame at low-medium and continue boiling until the milk reduces to about ¼ of the original volume. This may take an hour.
  • Add sugar and cardamom powder.
  • Cook for another 5-7 minutes until thick and still slightly gooey.
  • Add 1 tbsp ghee and stir. Add the remaining 1 tsp ghee and mix until the mixture leaves the sides of the pan.
  • Switch off and let cool, as it will thicken further upon cooling. Enjoy the Palkova warm or at room temperature.

  1. Use a heavy-bottomed or nonstick pan to prevent burning.
