- Thoroughly wash the cotton seeds multiple times to remove any impurities. Soak them in water overnight.
- Wash and soak the raw rice in water overnight as well.
- Drain the water from both the cotton seeds and rice. Blend them together with some water until you achieve a smooth paste consistency.
- Strain this mixture to obtain a milky liquid.
- Pour the milky liquid into a saucepan and cook over medium-low heat for 8-10 minutes, stirring continuously. The mixture will begin to thicken.
- Incorporate the jaggery into the thickened milk, mixing well until it dissolves. Continue cooking for an additional 4 minutes.
- Stir in the cardamom and dry ginger powder for flavor.
- Remove the saucepan from the heat and blend in the coconut milk.
- Serve the Paruthi Paal warm, allowing the comforting flavors to soothe and nourish.
Notes
- Ensure the cotton seeds are washed well to remove any dirt or impurities.
- Soaking the seeds and rice overnight facilitates easier grinding.
- Although jaggery is the traditional sweetener for this recipe, it can be substituted with karupatti (palm jaggery) or regular sugar. However, jaggery is preferred for its health benefits.
- For added texture and flavor, consider mixing in some grated coconut.
