Instructions

  • In a blender, coarsely grind the shallots and garlic to form a paste.
  • Heat coconut oil in a non-stick pan over medium heat. Add the dried red chillies followed by the ground shallot-garlic paste. Fry for about a minute until fragrant.
  • Add the chicken pieces, curry leaves, turmeric, and salt to the pan. Stir well to coat the chicken in the spices.
  • Reduce the flame to low and continue to fry the chicken for 30-40 minutes, stirring occasionally, until the chicken is well roasted and the mixture is dry.
  • Once the chicken is fully cooked and dry, turn off the heat.
  • Garnish the Chicken Pallipalayam Fry with fresh curry leaves and chopped coriander leaves before serving.

  1. For a slightly moist version of the dish, you can finish it off with a splash of coconut milk.
