Instructions
- Place raw mango chunks in a pressure cooker along with jaggery, salt, turmeric powder, and red chilli powder. Add 1/2 cup of water and pressure cook for 3 whistles. Turn off the heat and allow the pressure to release naturally.
- Once pressure is released, open the cooker. The mixture should have a jam-like consistency. Stir and adjust salt if necessary.
- Heat gingelly oil in a saucepan over medium heat. Add mustard seeds, cumin seeds, and dry red chillies. Cook until the seeds start to crackle. Add the curry leaves and stir for a few seconds.
- Add the seasoned oil to the cooked mango mixture. Bring to a brisk boil and then turn off the heat. Transfer to a serving bowl or an airtight container for storage.
Notes
- This pachadi can be refrigerated in an airtight container and will stay fresh for at least one week.
