- Sodhi, also known as Mappillai Sodhi, is a traditional coconut milk-based dish from the Tirunelveli region of Tamil Nadu. Instructions
- Grate or chop a fresh coconut. Blend with warm water and strain through a metal strainer to extract the first, second, and third batches of coconut milk.
- Pressure cook moong dal until soft, then mash and set aside.
- Heat coconut oil in a pan. Sauté garlic, onion, ginger, and crushed green chillies until fragrant but not colored.
- Add drumstick and beans with the third extract of coconut milk. Cook covered for 3 minutes, then add potato and carrot and cook for an additional 2 minutes.
- Stir in the second extract of coconut milk and cooked moong dal. Simmer for a few minutes, then add the first extract of coconut milk. Heat through but do not boil.
- Turn off the heat, stir in lemon juice, and garnish with fresh curry leaves and a teaspoon of coconut oil.
Notes
- Add salt when adding the second extract of coconut milk to balance the flavors.
- Use fresh coconut for the best flavor and texture in the coconut milk.
- Serve Sodhi with rice or idiyappam for a complete meal.
