Instructions

  • In a bowl, mix the maida with water to make a stiff dough. Cover the dough with 2 cups of water and set it aside for 30 minutes.
  • Knead the dough in the water to extract the "maida milk." Strain it and discard the leftover gluten.
  • Cover the strained milk with a lid and set it aside for 2 hours. Discard the clear liquid at the top and use only the settled milk at the bottom.
  • In a pan, combine the maida milk, coconut milk, and 1/4 cup of sugar. Stir continuously until it thickens (about 10-15 minutes).
  • In a separate saucepan, caramelize the remaining 1/4 cup of sugar until it reaches a deep amber color. Pour this into the halwa mixture.
  • Continue cooking and stirring the mixture for 45 minutes to 1 hour, or until the oil separates from the coconut milk and the halwa is thick.
  • Stir in the chopped cashews.
  • Transfer the halwa to a greased pan and let it cool for 4-5 hours.
  • Slice and serve.

Notes

  1. Make sure to stir continuously while cooking to avoid sticking or burning.
  1. Adjust the level of sweetness to your preference by adding more or less sugar.
  1. The halwa may require longer resting for the best texture.
