Instructions

  • Soak the urad dal in water for 30 minutes. Drain completely and set in a colander.
  • Pulse the urad dal without adding water until coarsely ground. Add the peppercorns and rice flour, and pulse again with 1 tsp of water if necessary.
  • Mix the ground mixture with 1 tsp of hot oil and salt.
  • Grease a ziplock cover with oil. Take a lemon-sized portion of the dough and place it on the ziplock. Flatten it using another greased cover and a flat vessel to get a round shape.
  • Make a hole in the center and carefully place the vadai in hot oil.
  • Fry on medium-low heat until golden brown on both sides. Drain excess oil.
  • Repeat the process for the remaining dough.

Notes

  1. Don't soak the dal for more than 30 minutes to avoid sogginess.
  1. Ensure the oil is not too hot while frying for even cooking.
  1. Rice flour and hot oil provide crispiness, so don't skip them.
  1. Thin vadais result in a crunchier texture.
