Instructions
- Soak the urad dal in water for 30 minutes. Drain completely and set in a colander.
- Pulse the urad dal without adding water until coarsely ground. Add the peppercorns and rice flour, and pulse again with 1 tsp of water if necessary.
- Mix the ground mixture with 1 tsp of hot oil and salt.
- Grease a ziplock cover with oil. Take a lemon-sized portion of the dough and place it on the ziplock. Flatten it using another greased cover and a flat vessel to get a round shape.
- Make a hole in the center and carefully place the vadai in hot oil.
- Fry on medium-low heat until golden brown on both sides. Drain excess oil.
- Repeat the process for the remaining dough.
Notes
- Don't soak the dal for more than 30 minutes to avoid sogginess.
- Ensure the oil is not too hot while frying for even cooking.
- Rice flour and hot oil provide crispiness, so don't skip them.
- Thin vadais result in a crunchier texture.
