Instructions

  • Preheat the oven to 100°C and line a baking tray with parchment paper.
  • Pulse the cashews in a blender until they are coarsely ground.
  • In a clean, dry bowl, beat the egg whites for around 2 minutes until they become airy and frothy.
  • Gradually add sugar one spoonful at a time while beating until combined.
  • Continue adding sugar until the mixture is light, airy, and mousse-like, achieving a shiny and thick consistency.
  • Fold in the salt, ground cashews, and vanilla extract gently.
  • Spoon the mixture into a piping bag and pipe out small macaroons onto the lined tray.
  • Bake for 1 hour and 30 minutes. Turn off the oven and let the macaroons cool inside for 3 to 4 hours.
  • Once fully cooled, store in an airtight container.

  1. Ensure the bowl and beater used for egg whites are clean and dry.
  1. Use room-temperature eggs for the best results.
  1. Add sugar spoonful by spoonful, and beat until fully dissolved.
  1. Never open the oven door while baking to maintain the desired texture.
