- Continue adding sugar until the mixture is light, airy, and mousse-like, achieving a shiny and thick consistency.
- Fold in the salt, ground cashews, and vanilla extract gently.
- Spoon the mixture into a piping bag and pipe out small macaroons onto the lined tray.
- Bake for 1 hour and 30 minutes. Turn off the oven and let the macaroons cool inside for 3 to 4 hours.
- Once fully cooled, store in an airtight container.
