- Wash the chicken pieces thoroughly and drain.
- Finely chop the onions and tomatoes, and prepare ginger-garlic paste if you don't have it.
- Heat gingelly oil and fry all the whole spices together. Add cumin and fennel seeds until they crackle.
- Add the chopped onions, curry leaves, and green chillies, then sauté until browned.
- Add the ginger-garlic paste, sauté till the raw smell disappears, then add tomatoes and cook them soft.
- Add turmeric powder, coriander powder, chicken, salt, and black pepper powder, and mix well.
- Cover and let the chicken cook in its juice for 6 minutes, stirring occasionally.
- Add water if using chicken with bones, cover again for 5 minutes.
- Garnish with coriander or mint leaves before serving.
Notes
- Use chicken with bones for richer flavor.
- For a drier version, skip tomatoes and add a few drops of lemon after cooking.
- Adjust the consistency and cook further if needed.
