Instructions

  • In a large bowl, combine 1.5 cups of plain flour, 0.5 tsp turmeric powder, and salt. Gradually add water and knead into a soft dough. Incorporate 2 tsp of oil, cover, and let it rest for 2 hours for softer polis.
  • Heat 2 tsp oil in a pan, add mustard seeds and curry leaves. Once they crackle, add chopped onions with a pinch of salt and sauté until translucent.
  • Add mashed potato, green peas, turmeric powder, sambar powder, garam masala, cashew bits, and salt to taste. Cook for 2 minutes, then mix in coriander leaves. Allow to cool completely.
  • Make lemon-sized balls from the potato mixture. Similarly, prepare equal-sized balls from the rested dough.
  • On a greased parchment paper, flatten a dough ball, place a potato ball in the center, and encase it with the dough. Roll it out gently between two greased papers to avoid sticking.
  • Cook the rolled Polis on a greased hot pan until both sides are done. Smear ghee and sprinkle Idli Milagai Podi and some coriander leaves on each side for added flavor.
  • Repeat the process for the remaining dough and potato mixture.

Notes

  1. The longer the dough rests, the softer the Polis will be.
  1. Ensure the potato masala is completely cooled before stuffing to prevent the dough from becoming soggy.
  1. Do not omit the Idli Milagai Podi, as it significantly enhances the flavor of Kara Poli, giving it its distinctive taste.
