Instructions
- Pressure cook the potatoes and moong dal. Peel and mash the potatoes and moong dal separately.
- Slice the onions and green chillies. Grind the grated coconut, fennel seeds (if using), and garlic with water into a smooth paste.
- Heat oil in a pan and temper with the ingredients listed under "To Temper."
- Add the onions and green chillies, and fry until the onions turn translucent.
- Add 2 cups of water and salt, then boil for 3 minutes. Add the mashed dal and potatoes, mix well, and bring to a boil.
- Add the ground coconut paste, mix well, and simmer until the gravy thickens.
- Add lemon juice before serving or use 1 tomato instead, fried after the onions.
Notes
- Use only up to 2 garlic flakes, as more will overpower the flavor.
- The fennel seeds can be omitted, and the flavor will still be excellent with the cinnamon and garlic combo.
- Instead of grinding garlic with the coconut, crush and fry it with the onions.
- Kadapa is typically white in color but you can add turmeric for a different flavor.
