- Degree Filter Coffee is a classic South Indian beverage, brewed using a traditional filter to create a strong, aromatic coffee decoction. This is mixed with frothy, boiled milk and sugar to produce a rich, smooth coffee with a distinctive flavor. Instructions
- Add 2 tbsp of coffee powder to the perforated upper part of the filter.
- Use the stand (perforated plate with a stand) to gently press and level the coffee powder.
- Boil the required amount of water and pour into the filter up to the rim. Cover immediately with a lid.
- Let the decoction drip for 15 minutes to ½ hour. Collect the first degree decoction. Add more hot water to brew a second time if desired.
- Boil the milk thoroughly and froth with sugar using a tumbler and dabara.
- Add the desired amount of decoction (about 2 tsp to 1 tbsp) and froth again.
- Serve piping hot in the dabara tumbler set.
Notes
- Choose the correct filter size and add the appropriate amount of water for a strong decoction.
- Press coffee powder gently if its finely ground, and firmly if its coarse.
- Reheating the coffee will affect its taste; use a double boiler method if necessary.
- Boil milk on the stove for better heat retention, and use fresh rather than UHT milk for best flavor.
