- Clean and wash the chicken, then cut it into small, bite-sized pieces.
- Heat sesame oil in a pan. Add half the curry leaves and dry red chillies. Sauté until aromatic.
- Add chilli powder, turmeric powder, and ginger garlic paste. Stir for a few minutes.
- Add the chicken and ¼ cup water. Cover the pan and cook for 30 minutes on low flame.
- Add shredded coconut and stir well. Cook for another minute.
- Finish with the remaining curry leaves and serve with rice or chapati.
Notes
- Deseeding the dry red chillies reduces their heat while retaining flavor.
- Add extra chilli powder if you prefer a spicier version.
